Hot Pineapple Dip

Makes 3 cups

Great to serve as a dipping sauce for chicken strips, egg rolls or wontons.

Ingredients
2 pounds crushed pineapple, undrained
16 fluid ounces Karo® Light Corn Syrup
2 fluid ounces white vinegar
4 teaspoons lime peel, freshly grated
2 teaspoons fresh ginger, grated
1 teaspoon salt
1/2 teaspoon red crushed pepper
Directions

Combine all ingredients in a food processor or blender.  Blend 2 to 3 seconds until mixture resembles chunky sauce.

Pour into a saucepan.  Bring to a boil over medium-high heat, stirring frequently.  Reduce heat and cook 10 to 12 minutes until sauce has thickened.
