Pumpkin Protein Waffles with Cinnamon Syrup

Ingredients

Waffles
1 cup flour
1/3 cup vanilla protein powder
1/4 cup Argo® Corn Starch
1 tablespoon Argo® Baking Powder
2 teaspoons pumpkin pie spice
1/4 teaspoon salt
1 cup milk
2 eggs
1/2 cup pumpkin puree
2 tablespoons melted butter
1 teaspoon vanilla
1/2 cup Karo® Light Corn Syrup
1/4 cup brown sugar
1/4 cup water
1/2 teaspoon cinnamon
dash salt
1 tablespoon butter

Directions

For the Waffles

Add all of the waffle ingredients to a blender and blend until smooth. Scrape down the sides and blend once more to ensure that all ingredients are incorporated. Heat a waffle iron and coat with cooking spray. Cook the waffles until golden brown and serve with cinnamon sauce and/or maple syrup, if desired.

For the Sauce

Add the corn syrup, brown sugar, water, cinnamon and salt to a saucepan. Stir and cook over medium-high heat, stirring often until it reaches a boil. Let the syrup boil for 2-3 minutes. Remove from the heat and stir in the butter. Let cool for 10 minutes to thicken a bit before serving.
